Here is the recipe that Gino suggested. Its Tuna and Pepper Fishcakes.
 
Gino's Tuna and Pepper Fishcakes
 
Serves 4
 

Ingredients:

300g tuna chunks in olive oil (drained)
250g potato
2 slices bread (soaked and drained)
2 eggs
1 clove garlic (finely chopped)
Handful of flatl leaf fresh parsley (chopped)
½ lemon (unwaxed)
2 handfuls of toasted and finely blended breadcrumbs
10g black pepper
Salt to taste

Preparation:

Boil and mash the potato and place in a large bowl. Once cold add the bread, eggs, tuna, garlic, parsley, salt and pepper and mix well together. Add the zest and the juice of half lemon stirring continuously.

Once the mixture is ready, make small balls in your hand, flattening them gently and coat them in the breadcrumbs. Place them in a tray on baking paper and bake in pre-heated oven of 180º for approx. 15 minutes. Once cooked serve them hot or cold.
